This Sweet and Sour Chicken combines crispy chicken with chunks of onion, bell pepper and pineapple in a sticky homemade sauce. Serve it in rice bowls for a quick weeknight dinner. So much better than takeout!
Ingredients
Chicken
- 1 pound boneless skinless chicken thighs, cut into 1-inch pieces, or chicken breasts
- 1 teaspoon salt
- 1/2 cup cornstarch
- 1 1/2 cups flour
- 1 egg, beaten
- 1 tablespoon oil, canola oil or similar
- 1 ¼ cups water
- vegetable oil, for frying
Vegetables
- 1 red bell pepper , cut into 1″ pieces
- 1 green bell pepper , cut into 1″ pieces
- 1 medium yellow onion , cut into 1″ pieces
- 1 tablespoon oil, canola oil or similar
- 1 cup pineapple chunks, fresh, or canned/frozen
Sweet and Sour Sauce
- 1/2 cup sugar
- ¼ cup rice vinegar , or white vinegar
- 2 teaspoon garlic, minced, or garlic powder
- 2 tablespoons soy sauce , low sodium recommended
- 1/4 cup ketchup
- 2 tablespoons cornstarch, mixed with 2 tablespoons water
- sesame seeds, optional garnish
